Zuppa di Melone Recipe

Chilled Melon Soup

Serves: 2

INGREDIENTS

For the soup:

360g Sunsweet Mantovano melon
2g Salt
20g Extra virgin olive oil
6g Red wine vinegar

For the marinated melon:

120g Sunsweet Mantovano melon
4g Basil
4g Extra virgin olive oil

METHOD

For the soup:

1. Cut the melon into 2cm pieces.
2. Add the melon, salt, oil and vinegar into a blender.
3. Blend the the ingredients together for 2 minutes.
4. Strain and set aside in the fridge.

For the marinated melon:

1. Cut the melon into 2cm pieces.
2. Season the melon with the oil, a drop of vinegar and chopped basil.
3. Set aside in the fridge to allow the melon to marinate.

To serve:

Remove the soup from the fridge and garnish with the marinated melon.
